Braised Red Cabbage

 

Serves 6-8 - Cooking time 1 hour 15 minutes

 

Ingredients:

2 lb (1kg) Red Cabbage

4 medium Onions, halved and sliced thinly

1 lb (500g) Cooking Apples, peeled, cored and sliced

1 clove Garlic - chopped

¼ tsp nutmeg grated

¼ tsp ground Cinnamon

¼ tsp ground cloves

3 Tbspns Brown Sugar

3 Tbspns wine vinegar

½ oz Butter

Salt and Black pepper

 

Instructions:

Discard the tough outer leaves of the cabbage, cut into quarters, and remove the hard stalk. Finely shred the rest of the cabbage with a sharp knife. Then in a casserole dish, layer all the ingredients starting with the cabbage, pour in the vinegar and dot with the butter. Cover with a tight lid and cook in a low oven (Gas 2, 150 C, 300F, Bottom right Aga 4 door) for at least an hour. It is difficult to overcook this! Stir once or twice during cooking. Can be cooked ahead of time and it freezes very well if there is any left over.
